I absolutely love traditional brown sugar glazed sweet potatoes. They’re the perfect holiday treat. But their nutritional profile just isn’t something that is worth it to be all of the time. That is why I decided to make a more macro friendly, “skinny” version that is still full of flavor but not of calories.

Start out by preheating the oven to 450 and lining a baking sheet with either a silicone baking mat or sprayed tin foil.

Next peel and chop your sweet potatoes into 1″ cubes and place in a bowl. In another small bowl mix your melted butter, brown sugar, cinnamon, salt and pepper. Then pour this over the sweet potatoes and mix until evenly coated. Spread the sweet potatoes onto your prepared baking sheet in a even layer and bake for 20 minutes or until tender. Stir about half way through.

Ingredients

  • 2 large sweet potatoes (about 600g total)
  • 4 tbsp melted butter
  • 2 tbsp brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • a pinch of pepper

Instructions
