Now that Thanksgiving is less than 2 weeks away, the holidays are going to be here before you know it! So what better way to prepare than with this delicious healthy peanut butter buckeye recipe?! Like the majority of my recipes, these buckeyes are super simple to throw together, but are really quick to devour. And if you’re a chocolate and peanut butter fan, then you might struggle holding yourself back from eating the entire batch. Yes, they are that good!! Now let’s move on to the recipe…
In a bowl mix together the regular peanut butter, powdered peanut butter, honey, and vanilla extract. Then separate and roll into uniform balls, and set aside. I made these into 13 smaller balls, but feel free to make larger or smaller ones.
Then in another bowl heat your chocolate chips and coconut oil in the microwave until melted. I did this in 30 second intervals, stirring it in between to avoid the chocolate burning.
Line a baking sheet with parchment paper. Then dip each peanut butter ball into your melted chocolate and set on the parchment paper. Once you have dipped them all, place the baking sheet in the fridge until the chocolate hardens (about 30 minutes).
Recipes Notes:
- Not a peanut butter fan? Feel free to sub in your favorite nut putter in place of the regular peanut butter!
- I like to use refined coconut oil to avoid adding any coconut flavor to my dishes. But if you’re a coconut fan, feel free to use unrefined coconut oil
