If you have been following my blog for a while now then you know that I absolutely love easy and quick meals. So this means that one pan/pot meals have a special place in my heart. This new recipe is all of the above! This BBQ Chicken Bake can be on the table in less than an hour, but the best part is that it only really takes about 10 minutes of actual prep time. The rest is simply cook time in the oven! This BBQ Chicken Bake is a recipe that the entire family will love!

Start out by preheating your oven to 350 degrees. Then grab a glass baking dish and spray it with nonstick cooking spray.

Next grab your chicken breasts and trim and chop them into bite-sized pieces. The key is making sure that each piece is roughly the same size, or else it won’t cook evenly. Place your chopped chicken in the bottom of your greased baking sheet in an even layer.

Next you can peel and chop your onion, or if you’re like me you buy one already diced to make this recipe even quicker! Then place your diced white onion in the baking dish over the chicken. Add the BBQ sauce on top and spread it around evenly with a spatula. Sprinkle the cheese on top and then bake for 30-40 minutes, or until the chicken is fully cooked and reaches 165 degrees. Serve immediately or store in the fridge up to 5 days.

Serving Suggestions:

  • Keep the recipe low carb by serving this over cauliflower rice, with a side of veggies, or simply with a side salad!
  • If you’re not worried about keeping it low carb, this recipe also goes great with some roasted potatoes, brown rice, or quinoa.

  • 1/2 white onion, diced (about 3oz)
  • 200g BBQ sauce (about 3/4 cup)
  • 3/4 cup (84g) of shredded mexican cheese (or cheddar)
